Basic Texas Chili

Kate and I have settled on a schedule where I cook dinner two nights a week, and I wanted to cook up a pot of chili for one of them. So I sat down at my handy-dandy search engine, and asked it for “Paleo Recipe Chili”, and quickly found myself at Paleo Eats. This is a great website with lots of good recipes, amoungst them an excellent Chili Recipe. This is a real chili, for those in Texas, no beans which is great for Paleo.

My first adventure of using this recipe proved to result in a very hot bowl, because I mixed my own chili powder from spices in my cabinet. I used a little to much Chipotle and Cayene Pepper powder in my mix. Still, a damned fine bowl of fresh chili.

Ingredients

  • 1 lb ground beef (grass-fed preferable)
  • 1 chopped medium onion
  • 2 tbsp olive oil
  • 4-5 minced cloves garlic
  • 1 can organic tomatoes 14.5oz (petite-diced)
  • 1 chopped green bell pepper
  • 3-4 tbsp chile powder
  • 2 tsp dry oregano
  • 1-2 tsp ground cumin
  • salt and pepper to taste

Directions

Add olive oil to a pan on medium heat, brown ground beef with chopped onion and minced garlic. Then add tomatoes, bell pepper, chile powder, oregano, cumin, and salt. Then simmer the mixture for 20 mins or until the meat and green peppers are tender and the tomatoes cook into a sauce. Salt and pepper to taste. Possibly the addition of some tomato paste might be good, though I didn’t have any while making this dish this week and it tasted great.

Overall, I’d give this recipe 4 out of 5 stars, it’s damn good chili, that is quick to prepare.

On Track So Far

So I’ve made it through a full week of eating Paleo, and working out for a 2 hour block per day. My wife has been suffering from sore hips, and my back started hurting today.

From a food point of view, it’s been pretty easy, except for the day where I ate almost all protein and suffered a nasty headache as a result. I’ve been warned about Carb-Flu by my friend Travis and will tough it through for now. I’ve also had really bad energy crashes every day around 4-5pm.

Total weight loss for the week, is 20 pounds.

Initial Weigh-In

Weighed in last night at 8pm to set the start weight, which is 614 pounds. So the goal is 524 pounds by October 26th, 2012.

90 Pounds in 90 Days

A wise mentor once told me that a goal isn’t a goal unless you tell someone. My wife and I have committed to a major change in lifestyle, we are going to spend the next year doing everything we can to lose alot of weight. Our plans begins on Thursday, July 26th, 2012, and roughly involves:

  • Commiting to a Paleo Diet lifestyle - Removing grains, legumes and dairy from our diet completely.
  • 2 hours of workout, per day, 6 days a week - Sunday is our day of rest, otherwise we will be working out. Current plan is for this to be early morning workouts, 5:30am - 7:30am each day.
  • Weekly weigh-ins - Every week, on Wednesday evening, we will weigh in and take 5 photos : full body front, full body back, full body profile, closeup face front, closeup face back.

I am a person that is motivated by numbers and so I’ve set a personal goal for myself : Lose 90 pounds in 90 days. That will take a major commitment to limiting the amount of calories I take in every day, in addition to all of the workout I’ve got scheduled. It’s not at all sure I can make that number, but I am committed. During the journey I’ll be using this blog to talk about my results, what sucks and what doesn’t, and generally try to keep myself sane. Expect me to talk recipes, goals & progress towards them, workout techniques, motivators and demotivators, and lots of other stuff.
